含人參皂甙(ginsenoside)Rb1、Rb2、Rc、Rd、Re、Rg2、Rh1、Rh2,20(R)-人參皂甙Rg2[1-3]。果汁中含游離氨基酸天冬氨酸(aspartic acid),蘇氨酸(threonine),谷氨酸(glutamic acid),絲氨酸(serine),纈氨酸(valine),蛋氨酸(methion-ine),亮氨酸(leucine),賴氨酸(lysine),組氨酸(histidine),精氨酸(arginine),脯氨酸(prolne);蛋白質(zhì)量7.02%,煙酸PPI.Oomg/100ml,維生素C0.22mg/100ml[4],鉀、鈉、鐵、鋅、錳、鎂、銅、硒等無機元素[4,5]和揮發(fā)油。油內(nèi)有:甲酸已酯(ethylfomate),2-丁醇(2-butanol),已醇(acetic acid),1-已醇(1-hexanol),2-庚醇(2-heptanol),3-甲基-1,3-苯二醇(4,5-dimethyl-1,3-benzenediol),2-(1,1-二甲基已基)苯酚[2-(1,1-dimethylethyl)phenol]、7,10-十五碳二炔酸(7,10-pen-tadecadiynoic acid),7,11-二甲基十二碳三烯(7,11-dimethyl-1,6,10-十二碳三烯-3-醇(3,7,11-trimethyl-1,6,10-dodeca-trien-30ol),十二酸已酯(ethyldodecanoate),2,6-又(,1,-二甲基已基)-4-甲基苯本bis(1,1-dimethylethyl)-4-methylphenol],十氫a-二甲基-7-(1-甲基亞已基)-[IS-(1α,4sβ,8aα)]萘酚{dec-ahydro-1,4a-dimethyl-7-(1-methyl-ethylidene)-[1S(1α,4sβ,8aα)]-naphthalenol},2,3,4,4a,5,6,7,8,-八氫-1,1,4a,7-四甲基順式-1H-苯并環(huán)庚烯-7-醇(2,3,4,4a,5,6,7,8,-octahydro-1,14,7-tetramethyll-cit-1H-benzocyohepten-7-ol),十六酸(hexade-canoic acid),十六酸已酯(ethyl hexadecanoate),11,14,-二十酸甲酯(11,14-eicosadienoic acid methyl ester),1,2,3,3a,4,5,6,7,-八氫,4-二甲基-7(1-甲基已烯基)-[Lr(1α,3aβ,4a,7β)]-奧{1,2,3,3a,4,5,6,7-octahydro-1,4-dimethyl-7-(1-methyl ethenyl)-[1R(1α,3aβ,4α,7β)]azulene}等29個成分[4]。又從果渣中提得雜多糖F,系由阿拉伯糖(arabinose),鼠李糖(rhamnose),木糖(xylose),半乳糖(galactose),半乳糖醛酸(galacturonic acid)按摩爾比5.9:4.3:0.3:1.0:17.4:0.7所組成,相對分子質(zhì)量為180萬[6]。
